Mini Pumpkin Whoopie Pies

I love this from Cooks.com:

COOKIES:
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup (1 stick) butter, softened
1 1/4 cups granulated sugar
2 large eggs, at room temperature, lightly beaten
1 cup LIBBY’S® 100% Pure Pumpkin
1 teaspoon vanilla extract

PREHEAT oven to 350°F. Lightly grease or line four baking sheets with parchment paper.COMBINE flour, baking powder, baking soda, cinnamon, ginger and salt in medium bowl. Beat butter and sugar in large mixer bowl on medium speed for 2 minutes. Add eggs, one at a time, beating well after each addition. Add pumpkin and vanilla extract; beat until smooth. Stir in flour mixture until combined. Drop by heaping measuring teaspoons onto prepared baking sheets. (A total of 72 cookies are needed for the recipe.)

BAKE for 10 to 13 minutes or until springy to the touch. Cool on baking sheets for 5 minutes; remove to wire racks to cool completely.

CREAM CHEESE FILLING:
4 ounces cream cheese, at room temperature
6 tablespoons butter, softened
1/2 teaspoon vanilla extract
1 1/2 cups powdered sugar
BEAT cream cheese, butter and vanilla extract in small mixer bowl on medium speed until fluffy. Gradually beat in powdered sugar until light and fluffy.SPREAD a heaping teaspoon of filling onto flat side of one cookie; top with flat side of second cookie to make a sandwich. Repeat with remaining cookies and filling. Store in covered container in refrigerator.

Estimated Times: Preparation – 20 minutes; Cooking – 10 minutes.

Sara’s Pumpkin Bread

It’s that time of the year when the cooler temperatures come, the leaves start to change color, and the house is filled with the wonderful scents of autumn. One of my favorites is pumpkin! My friend Sara over at tlithaquam gave me the best recipe  for pumpkin bread, so good that I just had to share it with you. She says, “This is a combination of pumpkin bread recipes I’ve put together and have perfected. It will win everybody over.”

Makes:
3 loaves
What You Need:
- 1 (15 oz) can pumpkin puree (or 15 oz. fresh pumpkin)
- 4 eggs
- 1 cup veg. oil
- 2/3 cup water
- 3 cups white sugar
- 3 1/2 cups all-purpose flour
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
-1/2 tsp ground cloves
- 1/4 tsp ground ginger
-1/2 cup toasted pumpkin seeds (optional)**
How to Make:
1. Preheat oven to 350 degrees.
2. Grease and lightly flour three 7×3 inch loaf pans.
3. In large bowl, mix pumpkin puree, eggs, oil, water, and sugar until blended.
4. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
5. Stir the dry ingredients into the wet mixture slowly until just blended.
6. Pour into the prepared pans. Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted into center comes out clean.

**Toasted Pumpkin Seeds

Spread 1/2 cup pumpkin seeds out on cookie sheet sprayed with Butter-Flavored Pam or other non-stick spray. Toast in oven until seeds are light brown and crispy (only takes a few minutes). Sprinkle on top of pumpkin bread mixture just before putting pans into the oven to bake.
